As you would expect of an island nation, the sea provides much of the food served in the Seychelles. Fish is prepared in stews, skewered on bamboo sticks or stuffed with garlic, chillies and spices before being wrapped and cooked in banana leaves.

 

  We had the most fantastic Creole lunch at Jardin du Roi on Mahe, with all the classic dishes including breadfruit pudding and Bourgeios (Red Snapper) - Go2Africa Travel Expert Kate Erskine  

 

There is not much meat consumed on the islands, although a spicy meat curry, obviously a hang over from the Indian influences on the island, is popular. As is the very traditional sausage and lentil stew.

Meals in the Seychelles are best washed down with Seybrew, a local lager that tends to take the sting out of Seychelles spices and chillies.
